Tea Gardens of Life

I still remember my tenure in the NE. While most of it was confined to Shillong, the many times my tastebuds pushed me across to the Assam Tea Gardens and up to Darjeeling Siliguri tea belts is what I wish to write about today. 
As some of you are aware, I have a love affair going on. While the Tea leaves leave me mesmerised , the  Coffee Granules have a crush on me(other way, too). 
As the morning sun casts its golden rays over the sprawling tea estates of Assam, the air becomes imbued with the tantalizing aroma of freshly brewed Assam tea. This iconic beverage, renowned for its robust flavor and deep coppery hue, holds a special place in the hearts of tea enthusiasts worldwide and a crazy nut like me. 

Derived from the Camellia sinensis var  assamica plant, Assam tea boasts a distinctively bold character, thanks to its unique terroir and processing methods. Among the various grades produced, the CTC (Crush, Tear, Curl) method stands out for its ability to yield a strong, full-bodied cup, perfect for kickstarting the day. Just the kick a Tankman would wish early morning. 

A visit to Amchong Tea Estate actually captures the entire process. The journey of Assam tea begins with the plucking of tender tea leaves, carefully selected to ensure optimal flavor development. These leaves undergo a meticulous process of withering, rolling, oxidation, and drying, culminating in the rich, malty brew that the tea crazy aficionados cherish.


One cannot overlook the vibrant infusion that Assam tea imparts. Its deep amber liquor entices the eye, promising a sensory adventure with every sip. The color, a testament to its quality and strength, captivates even the most discerning connoisseurs.

But it's not just the aroma and color that elevate Assam tea to culinary greatness; it's the exquisite dance it performs on the palate. With its bold, malty flavor profile, Assam tea awakens the taste buds, leaving a lingering warmth that comforts and invigorates in equal measure. I don’t add any ginger etc to this delightful tea. Just plain Tea. And yes, I have a secret of “cooking” Tea!

Today, inspite of being unwell, I hit the kitchen as a Novice Chèf and pairing Assam tea with traditional Indian breakfast delicacy viz, poha—a savory flattened rice dish—heightened my culinary experience, creating a symphony of flavors that celebrate the rich cultural tapestry of Assam and MP. 


In the kitchen, learning to cook with my lovely chef - in chief wife and partner of last three plus decades, the blending of Assam tea and Poha open doors to a world of gastronomic possibilities. Kitchen is where it all ‘cooks’ - From marinades to desserts, its versatile nature lends itself to experimentation, inviting both a novice like me and a seasoned chef like my beloved wife alike to explore its culinary potential. Kitchen is the best place to be. 

As the sun rose over the skyscrapers of GURJINDER Vihar, I let the aroma of freshly brewed Assam tea beckon me to embark on a journey of discovery—one that tantalizes the senses, delights the palate, and celebrates the timeless tradition of tea culture.
